Nestled in the heart of Jeonju Hanok Village, Namcheon Maru is a local favourite dedicated to one thing done exceptionally well: soy sauce bibimbap crafted the old-fashioned way.

While most bibimbap restaurants in Jeonju season their bowls with gochujang (red pepper paste), Namcheon Maru takes a quieter, deeper approach — fresh domestic vegetables, gently reheated, then tossed with aged house soy sauce. The result is a bowl that is savoury, layered, and far more nuanced than anything you might expect.

Jeonju bibimbap is already world-famous — named the #1 most-searched recipe on Google globally in 2023, and praised by The Guardian as one of the world's greatest comfort foods. Its origins trace back centuries: once called hwaban (花飯), meaning "flower rice," for the vivid, petal-like arrangement of colourful toppings, it draws on over 30 fresh ingredients passed down through generations of dedicated cooks. Today it is considered a Jeonju intangible cultural heritage.

But even within Jeonju, not every bowl is the same. What sets Namcheon Maru apart:
